First CSA Boxes Delivered Yesterday

Yesterday we delivered our first boxes to our nine CSA customers. The boxes contained:

Shunkyo Radishes:
A spicy semi-long radish with hot pink skin

Baby Pac Choi (AKA Bok Choi): 2 heads each of Red Choi (purple leaf) and Black Summer (deep green leaf)

Large bunch of scallions: Green onions –Copra (the more yellow and strong flavored ones) and Alissa Craig Exhibition (milder and white).

Spicy Salad Mix: A mix of buttercrunch, oakleaf, Bibb/Romaine cross, and Deer Tongue lettuces, accented with lacinato kale, tat soi, baby spinach, and some red mustard to add a little bit of heat.

And for those who purchased the additional eggs from our grass fed chickens, those were also added into the box.
We’d love to hear what people did with their food this week. We actually used the first three ingredients last night in a delicious spicy/sweet cole slaw made with mayonnaise, red wine vinegar, salt, and pepper.  Feel free to leave any recipes or ideas in the comments until we get our recipe board up and running.
We hope to see the boxes get more and more full as what’s in the ground continues to mature.  You can expect to see more of the same, but with new additions each week. Coming up soon are swiss chard, kale, head lettuce, peas, mustard, and new varieties of radish.  Soon after that we’ll have turnips, carrots, basil, kohl rabi, fennel, beets and then cucumbers and summer squash.

    It’s a bit of work but I get one recipe tied to the box that my CSA comes in each week – and of course, it uses one or two items in the box. I love that it gives me an idea.

  2. We grilled some pac choi tonight, we split the pac choi in half andkept the leaves and stems intact and then Chad seasoned the pac choi with olive oil, sea salt, fresh cracked black pepper, and a drizzle of balsamic and grilled it up.

    It was delicious!! A must try!

    This is our fourth year eating through a CSA/farmer’s market and I love just eating a good mixed green salad with scallions and radishes and a really good dressing. It’s something that I crave every spring now because it never tastes quite the same any other year.

    Here is my favorite dressing that I adapted from,

    Old Spaghetti Factory Creamy Pesto Dressing Recipe

    Wisk together
    * 3/4 cup oil
    * 3/4 cup mayonnaise
    Mix with the rest of ingredients and let sit in fridge for several hours to over night
    * 1 cup buttermilk
    * 2 tablespoons grated romano cheese
    * 2 tablespoons dried basil
    * 1/2 teaspoon salt
    * 1 clove garlic, minced
    * a dash of hot pepper sauce
    * 1/4 teaspoon paprika (optional)
